  1. While waiting for the water to come to a boil, chop scallions and ginger.
  2. Once the water comes to a boil, add miso paste and turn the fire down and bring the water to a simmer. Add the ginger pieces and dry chillis.
  3. Add somen noodles once the miso paste dissolves. Somen noodles cook extremely fast, about 2.5 minutes, 3 minutes tops.
