  2. Prepare 2 tbsp peanuts
  3. Get 2 tbsp oil
  4. Take 10 curry leaves
  5. Make ready 2/3 cup chopped coriander leaves
  6. Prepare To taste salt
  7. Take 1 tsp sugar
  8. Prepare 1 tsp turmeric powder
  9. Make ready 1 tsp cumin seeds
  10. Get 1/2 tsp mustard seeds
  11. Prepare 1 big onion (chopped)
  12. Make ready 2 chopped green chillies

It is the best makeover you can give to your rice. The aromatic spices that go in the tempering process gives your rice a different look altogether. Heat oil in a nonstick pan, add roasted peanuts. After a few minutes, add mustard and cumin seeds.

Steps to make Phodnicha rice:
  1. Add oil to pan. Add peanuts and fry well. Keep aside. Add mustard seeds and cumin seeds to oil. After 25 seconds add curry leaves and onion. Saute for 4 minutes in low flame.
  2. Add green chillies. Saute for 30 seconds. Add rice. Add turmeric powder,salt,sugar. Mix well.
  3. Add 1/2 cup coriander leaves and 1 tbsp peanuts. Mix. Garnish with peanut and rest of coriander leaves.Ready to serve.

When mustard seeds crackle, add curry leaves and green chili. Then add asafoetida, turmeric powder, salt, red chili powder and cooked rice.
