  1. Get Gram flour 1.5 cup
  2. Make ready 1/2 tsp Salt
  3. Make ready 1/2 tsp Sugar
  4. Prepare 1/2 tsp Turmeric

  6. Take 1 sachet Eno fruit salt

Instant Khaman Dhokla Recipe, a famous and healthy snack from Gujarat. Khaman (Besan) dhokla, is a tasty Gujarati snack. This salty snack has a texture similar to cake. This will be used to steam the dhokla.

Instructions to make Khaman Dhokla:
  1. In a bowl add gram flour, salt, sugar, turmeric.
  2. Mix everything together.
  3. Gradually add water to make nice thick and creamy batter.
  4. Mix well so that there are no lumps and should be a nice flowing consistency not to thick or thin.
  5. Let the batter seat for about 10 mins.
  6. Grease the square or round shape tin with oil.
  7. After 10 mins add Eno fruit salt, give it a quick mix.
  8. When you add Eno you can see batter become in foaming consistency, make sure you mix it well.
  9. Pour the batter in to the tin. Don't tap the tin just spread it out evenly on all sides.
  10. Now we can steam cook the Dhokla batter.
  11. Take a pot add water, place stand let it boil, now place your tin gently in to the pot.
  12. Close and steam cook on medium low flame for about 20 mins.
  13. After 20 mins just insert a toothpick, if it is clean. It means Dhokla cooks completely. Remove the tin let it cool completely.
  14. Take a pan add 1tbsp oil,add 1/2 tsp mustard seeds, when mustard seed start splattering add green chillies, few curry leaves.
  15. When it splits reduce the flame, add 1/2 cup of water, add 1/2 tsp salt, 2 tbsp sugar.
  16. When water comes to boil, turn off the flame and squeeze half lemon juice.
  17. Remove the Dhokla from the tin, cut in pieces. Pour the tempered sugar and water solution. Make sure you cover all the area.

When the water boils, turn down the heat to medium. Khaman Dhokla is a soft and spongy Gujarati snack. It has a slightly sweet and tangy taste.
