  5. Pour in ur leftover stew and add the fried fish into it. Season with the maggi and salt then cover to boil for 5 mins. The fried fish in the mixture will give it a different taste entirely 😋😋.
  6. After 5 mins, bring out ur fried fish from the pot and set aside. Add water in to the pot and leave to bowl for few seconds. Then add ur parboiled rice and stir together with a wooden spoon (I used omo orogun). The water in the rice should be on the same level with the rice, if not, add in a little water and cover to cook. Ur heat should be on a medium heat by now.
  7. After few mins, taste the rice and if the seasoning isn't enough, add more to ur desired taste.when the water is almost dried up, turn down ur heat to low and u can add in ur sliced tomatoes and onions(I didn't add to mine cos I don't like it). Cover to dry up completely and turn off heat.
  8. Give it a good stir, add ur fish on top and cover for about 10mins. Your Jollof is ready. U can serve with fried plantain.
