  1. Get 200 gm besan
  2. Get 2 lemons Juice
  3. Take 6-7 pc Green chilli
  4. Prepare 2 tsp Sugar
  5. Get to taste Salt
  6. Get 1 Pinch turmeric powder
  7. Take 1 tsp Baking powder
  8. Get 1/2 tsp Baking soda
  9. Prepare 15-20 pcs Curry leaves

Instant Khaman Dhokla Recipe, a famous and healthy snack from Gujarat. Khaman (Besan) dhokla, is a tasty Gujarati snack. This salty snack has a texture similar to cake. This will be used to steam the dhokla.

Instructions to make Khaman dhokla:
  1. Take 2cups of besan, add salt yo taste, pinch of turmeric powder,2 tbsp of lemon juice and little bit of sugar. Mix all ingredients very well, make sure there has no lumps. Now gradually Add water and make smooth paste out of it. Whisked it properly. Consistency should not to be too thick or too runny. Keep it a side for good 30-45 mins with a proper lid.
  2. For the cooking process First take a deep pan and fill it with water and keep it on heat for boiling. And on other side take a aluminium bowl or any cake tin and grease it with oil. Keep a side…
  3. Now after 30-45 mins the bater is ready for next ingredients. Add 1 tsp baking powder and 1/2 tsp of baking soda and pour them together in the bater and mix them very gently and transfer it to the pre ready cake tin or the aluminum bowl Immidietly. The process should bedone very quickly.
  4. Now put the bater in that pre boiled water gently and cover the pan for 20-25 mins in medium to low flame. After dat check it with a knife whether it cooked or not.
  5. For the syrup… Heat another pan and add 1 tbsp of refined oil. Add black mustard seeds, green chilli, curry leaves… Saute them add 2 cups of water.. Add 2 tbsp of sugar… Boil it.. When it becomes little bit thicker add 2 tbsp of lemon juice. Off the flame.. Let it cool.
  6. Now spread the syrup on top of the dhokla and cut it in pieces..

When the water boils, turn down the heat to medium. Khaman Dhokla is a soft and spongy Gujarati snack. It has a slightly sweet and tangy taste. The porous and fluffy nature of the snack is on account of addition of small amount of baking soda.
