  2. Get 250 gm Bengal Gram flour / Besan/ Chickpea flour
  3. Make ready 1/2 cup Curd/Yogurt (not very sour)

  5. Prepare 1/2 tsp Cooking/Baking Soda
  6. Get For seasoning to be mixed to the batter (to be added just before cooking)

  8. Take 1 pinch Turmeric

  10. Make ready 1 tsp Green Chilli paste (or as per taste)

  12. Take 3/4 tsp Citric acid (or lemon juice)
  13. Get 1 teaspoon Eating soda
  14. Take to taste salt

  16. Prepare 1 tsp Mustard Seeds
  17. Take 5-6 Curry leaves
  18. Prepare 2 tbsp Grated coconut
  19. Prepare leaves Coriander
  20. Take Little water + Oil to be topped on dhoklas

Instant Khaman Dhokla Recipe, a famous and healthy snack from Gujarat. Khaman (Besan) dhokla, is a tasty Gujarati snack. This salty snack has a texture similar to cake. This will be used to steam the dhokla.

Instructions to make Khaman dhokla:
  1. Mix first 1/2 cup curds with 1/2 water.
  2. To this add the besan and mix well to get a lump less batter, the consistency should be of idli batter, more of dropping not pouring consistency.
  3. Slowly add more water if needed else, add the soda. Keep it aside to rise for 1 hour.
  4. To the batter mix in the citric acid, oil, salt, sugar, green chilli paste and turmeric powder. Mix well.
  5. Take microwave pan and grease with oil. pour the batter.
  6. Microwave for 5 minute. To check if it is done or not. proof it using toothpick or knife. If the knife comes out clean and does not have any batter sticking, then it's done.
  7. In a bowl, mix 3 tsp of water along with a tsp of oil. Remove the plate from the pan, pour the water and oil mix over the top. For seasoning, heat a pan with oil, add curry leaves, sesame seeds, mustard seeds and finely chopped green chilies. When mustard starts popping, remove and pour over the dhokla.
  8. Cut them out, after slightly cooling them, into squares.

When the water boils, turn down the heat to medium. Khaman Dhokla is a soft and spongy Gujarati snack. It has a slightly sweet and tangy taste. The porous and fluffy nature of the snack is on account of addition of small amount of baking soda.
