  1. Take 3/4 cup tur/arhar(split pigeon peas)
  2. Take Vegetables
  3. Prepare 1/2 cup lauki (bottle gourd)cubed
  4. Prepare 1/4 cup pumpkin cubed
  5. Get 1 carrot cut into small pieces
  6. Prepare 1/4 cup brinjal cubed
  7. Make ready 7-8 beans chopped
  8. Take 1 tbsp coconut chopped
  9. Get 1 tomato chopped
  10. Get 1 tbsp tomato puree
  11. Prepare 1.5 tsp sambhar powder
  12. Take 1 pinch hing/asafoetida
  13. Prepare 2 dry red chillies
  14. Take 1/4 tsp turmeric powder
  15. Take 1 tsp red chilli powder
  16. Get 1 tbsp curry leaves
  17. Make ready 1 tbsp coriander chopped
  18. Prepare 2 tbsp oil
  19. Get 1/2 tsp mustard seeds
  20. Prepare 5-6 methi (fenugreek)seeds
  21. Take 1/4 tsp fennel seeds
  22. Make ready To taste salt
  23. Take 1 pinch sugar or jaggery
  24. Get 1 tbsp soaked imli (tamarind)pulp
  25. Prepare 5-6 cup water

Sambar is a dish in South Indian and Sri Lankan Tamil cuisines, made of toor dal and veggies, sambar masala. Sambhar synonyms, Sambhar pronunciation, Sambhar translation, English dictionary definition of Sambhar. n. Any of various large deer of the genus Cervus, especially C. unicolor of southern Asia. You know nothing would disappoint you more to see a plate of puffy hot idlis or piping hot dosa without its must-have accompaniment-sambhar.

Instructions to make Sambhar:
  1. Soak tamarind in 1/4 th cup warm water.Soak dal with warm water for 15 minutes.Cube brinjal, lauki and pumpkin into 1 inch pieces.Cut carrots into small pieces.Chop beans.Chop onion and tomato.Boil all vegetables except brinjal with red chillies,chopped coconut and onion with 1/2 tsp salt.Add tamarind pulp.Pressure cook dal with turmeric and little salt upto 2 whistles.Open lid after 5 minutes.
  2. Add sambar masala to the dal.Heat oil and lightly fry brinjal till soft.Add vegetables and tomato puree to the boiled dal and boil.Heat oil and sprinkle mustard,fennel and methi seeds.When they crackle,sprinkle 1 pinch hing and curry leaves and fry.Add this to the dal and boil.Adjust salt and pinch of sugar.Serve hot with rice,idli,vada,dosa or uttappam.
