Bottle Gourd Sambar or Lauki Sambar is versatile, nutritious and part of everyday cuisine in South India. Adding vegetables like Bottle gourd (Lauki or Surakai) in Sambar makes it more tasty and healthy.

The ingredients needed to make Idli and Bottle-gourd Sambhar:
  1. Get For plain Idli-
  2. Prepare 1/2 cup urad dal (soaked overnight)
  3. Make ready 1 cup plain rice (soaked overnight)
  4. Prepare as per taste Salt
  5. Get as required Ghee or oil to grease
  6. Make ready For For Sambhar-
  7. Prepare 1/2 bowl Toor daal
  8. Take 1 medium sized fresh bottle guard (cut in squares)
  9. Make ready 1-3 tsp Sambhar powder
  10. Get 8-10 Curry patta
  11. Make ready 1 tsp Chana dal
  12. Make ready 1 tsp Urad dal
  13. Take 1 tsp Mustard seeds
  14. Get 2-4 green red chillies cut in halves
  15. Take 1 tsp turmeric powder
  16. Make ready 1 tsp coriander powder
  17. Make ready 2 tsp Oil
  18. Prepare 1 tsp Jaggery or shakkar
  19. Prepare as required Water

Learn how to make Idli, recipe for Sambar and Coconut chutney. Idli with Sambar & Coconut Chutney. This is a delicious low fat dish of South India and can be enjoyed both as a snack and meal. I pressure cook the veggies(bottle gourd & tomato) along with tuvar dal and then blend them smooth.

Instructions to make Idli and Bottle-gourd Sambhar:
  1. Grind the rice and urad dal and mix together. Put into a large container and let it ferment. After it is fermented add salt and grease the idli stand. Pour a small quantity of batter in stand and steam for around 5-7 mins. Take out if a toothpick inserted in it stands clean.
  2. Heat the oil, add mustard add some seeds, curry patta, urad dal, chana dal, chillies etc. Add turmeric, coriander, jaggery and sauté for a couple of min.
  3. Boil soaked chana dal and lauki along with some salt and cook until done. Add this lauki, chana dal to the Tadka and cook for a few more minutes.
  4. Serve this when hot.

This way the veggies are hidden and my son I make it with idli or dosa and is loved by all. My son enjoys singing "garam garam sambhar main doobe idli"(idli sunk in hot sambhar) and will eat them all.
