Sambar Vadai is one of the most popular evening snack in any restaurants. Sambar Vadai and Rasa Vadai is even served as an appetizer. Crispy but fluffy deep fried Medhu Vada.

The ingredients needed to make Sambhar vada:
  1. Get For vada
  2. Prepare 1 cup urad dal
  3. Prepare 1 inch ginger
  4. Make ready 1 or as per your taste bud green chilli
  5. Take 1 tsp cumin seeds
  6. Take as required Salt
  7. Get 1 Onion finely chopped.(it is optional)
  8. Make ready 1 bunch fresh coriander leaves finely chopped
  9. Make ready For sambhar
  10. Prepare 1 cup tur dal
  11. Prepare 1 tsp urad dal
  12. Make ready 1 onion
  13. Prepare 1 tomato
  14. Take 2-3 pods garlic
  15. Prepare 1 carrot
  16. Make ready 1 small piece of pumpkin
  17. Make ready 1 small piece of raddish
  18. Make ready Can take ladyfinger and bottle gaurd also. Not in my recipie
  19. Get 1 pinch Hing
  20. Prepare 1/2 tsp Turmeric powder
  21. Take 1 cup curry leaves Handful
  22. Make ready to taste Jaggery
  23. Get to taste Sambhar powder.I use everest sambhar powder
  24. Take to taste Tamarind juice
  25. Prepare 1-2 dried red chilli
  26. Get 1/4 tsp Mustard seeds for tempering

It is popular in South Indian and Sri Lankan cuisines. Just before serving warm up sambhar, immerse vadas and let soak for two minutes. Sambar vada, sambar idli types are very popular in restaurants like saravana bhavan It is very easy to prepare sambar vada, just make medu vada, sambar and the only work. Sambar vadai is one my all time favorite, in fact i can say it is the entire family's favorite one.

Instructions to make Sambhar vada:
  1. For vada, soak urad dal overnight. Blend it in morning with ginger and chilli. I have not use water while blending. Add cumin seeds, salt, onion and corriender leaves in it. (I did not add it today).But it enhance the taste for sure. Batter should be thick and can stay in in your fingers. You can use meri vada maker also. But I use my hand. Sorry for not taking pics at that time.Fry it in a hot oil. Yummy vada is ready.
  2. For sambhar, pressure cook both dal with veggies, turmeric, salt and hing. Add sambhar masala and jaggery just after opening the pressure cooker. Give a nice boil and with the help of beater, you can mix all the veggies in dal. It should not be very thuch like gravy. Can add water to retain the consistency.For tempering the sambhar, add curry leaves and mustard seeds in hot oil with dry red chilli and add it in sambhar. Lastly add tamarind juice according to you taste.
  3. You can mix them like my pic and enjoy it. It should be served hot. I usually make coconut and groundnut chutney with it. I will share it again. Hope you all like my recipe.
