How to make Maa Ki Dal. In this version of Maa ki dal, we use only Whole urad lentils, and no kidney beans. This uses less amount of butter/ ghee, and takes lesser time than the makhani dal. Maa Ki Dal is a Punjabi everyday dal made with black urad.

Steps to make Maa ki dal:
  1. Wash properly all the dals and with 5cups of water pressure cook it. Add half of onion, tomatoes and ginger while cooking.Give at least 3-4whistles.
  2. Take oil in a kadhai, add cumin seeds. Let it splutter. Add left onions. Cook for 4-5mins or till they turn translucent.add left over tomatoes, green chilies, ginger and garlic.
  3. Add all the spices and salt. Put 3-4tblspn water and cook the masala for 5mins. Reason to add water is so that the onions and the dry spices don't get burnt. Add tamarind pulp and Jaggery. Add dal and adjust the consistency using water.
  4. Add chopped coriander leaves and serve hot with ghee, parathta or rice.

There is no addition of butter or cream in this recipe. Traditionally, the creaminess of the dal comes in slow cooking the lentil for hours. Maa ki daal literally means mother's lentils in Punjabi.
