Instructions to make Khichudi or khichri:
  1. Rinse and soak rice in water for 30 minutes.
  2. In a pan slow roast moong dal till light golden brown and aromatic.
  3. When the lentils become cool rinse them in water and keep aside.
  4. In a pressure cooker add ghee.Add bay leaf and Cumin seeds.Add one whole red chilli.
  5. Add grated ginger
  6. Saute for one minute
  7. Add chopped tomatoes green chilli and all vegetables.
  8. Add salt turmeric Powder and red chilli powder.
  9. Saute till tomato and veggies become tender.
  10. Add rice and dal saute for another two to three minutes.
  11. Pour 5 cups of water and stir well. Add one teaspoon sugar.
  12. Pressure cooker it on high heat till it give 4 to5 whistles.
  13. Served hot with some fried bringal.
  14. Sprinkle some ghee or clarified butter on the top of the khichudi.Your one pot healthy breakfast is ready to serve.
