It is popular in South Indian and Sri Lankan cuisines. Since a variety of mixed vegetables are also used to make sambhar it becomes nutrient rich. Sambar recipe shared here is the one which has been followed by my mum for several decades.

To begin with this particular recipe, we must prepare a few ingredients. You can cook sambhar using 21 ingredients and 8 steps. Here is how you cook that.

The ingredients needed to make Sambhar:
  1. Get 1 cup toor dal
  2. Prepare 1/2 cup chana dal
  3. Take 2 carrots
  4. Make ready 1/4 cup lauki (bottle gourd)
  5. Get 1/4 cup kaddu (pumpkin)
  6. Get 2 medium sized baigan (eggplants)
  7. Get 2 drumsticks
  8. Make ready 2 tsp turmeric powder
  9. Make ready to taste Salt
  10. Make ready 1/2 tsp black salt
  11. Make ready For tamarind pulp
  12. Take 1 tbsp tamarind
  13. Prepare 1/2 cup hot water
  14. Get For tempering
  15. Take 1 tbsp oil
  16. Take 1 tsp mustard seeds
  17. Make ready 1/2 tsp asafoetida (hing)
  18. Take 3-4 tsp sambhar powder
  19. Make ready 1 tsp Kashmiri red chilli powder
  20. Get 6 dried red chilies
  21. Take 8-10 curry leaves

Sambar is a dish in South Indian and Sri Lankan Tamil cuisines, made of toor dal and veggies, sambar masala. Sambhar synonyms, Sambhar pronunciation, Sambhar translation, English dictionary definition of Sambhar. n. Any of various large deer of the genus Cervus, especially C. unicolor of southern Asia. You know nothing would disappoint you more to see a plate of puffy hot idlis or piping hot dosa without its must-have accompaniment-sambhar.

Instructions to make Sambhar:
  1. Mix both dals and soak for 30 minutes.
  2. Cut vegetables according to your choice. I cut into large cubes.
  3. In pressure cooker take dals, turmeric powder, salt and other vegetables. Pressure cook it high flame. Take one whistle on high flame and second one in low flame, when third whistle is about to come turn off the gas and keep it aside.
  4. When cooker released all pressure, check dals. It's cooked perfectly not overcooked nor raw. This is the perfect mixture for sambar.
  5. In a bowl mix tamarind and hot water, rest it for about 30 minutes. After that mess it well and strain. We get a thick tamarind pulp.
  6. Heat dal mixture and add tamarind pulp according to your taste, I take 1 tbsp pulp and mix well. Put it on low flame.
  7. In a tadka pan heat oil put hing and mustard seeds saute for a few couple of seconds than add curry leaves and red chilli powder saute till crackles now add Kashmiri red chilli powder and sambar masala saute one minute and mix into dal mixture.
  8. Simmer it for 5-8 minutes adjust the consistency of sambar and other masala according to your taste. Tasty sambar is ready to serve. Serve hot with idli or dosa.
