My cousin's wife Ramya made Sago Idli for Tiffin and was very pleased with the result. When she told me about this recipe, I was a bit sceptical. But I tried making this sabudana idli as per her instructions. The consistency should be like the same for rava idli.

Instructions to make Sago Idli:
  1. Wash and Soak rice, urad Daal and fenugreek seeds in a bowl for 4 hours.
  2. Wash and Soak sago in separate bowl for 4 hours.
  3. After 4 hours Drain water and grind rice and Daal slightly coarse. Transfer it in a mixing bowl.
  4. Drain water from sago and grind finely like a paste. Transfer it in the same mixing bowl in which rice Daal is kept.
  5. Keep this mixture covered for 8 hours. After 8 hours it will be fermented. Now add salt according to taste and whisk the batter thoroughly for 5 minutes. It will become lighter.
  6. Add 1 glass of water in pressure cooker and heat it to boiling point.
  7. Now grease idli mould properly and pour 1 tb spoon batter in each mould. Put it in pressure cooker and steam for 12 minutes.
  8. After 12 minutes switch off the flame. Open the lid after 10 minutes and remove idlis with the help of knife and keep in a plate.
  9. Serve hot with sambhar.
