  18. Take 1 &1/2 cup rice

  23. Take 2 tbsp chickpea flour
  24. Take 2 cups water

  26. Get 2-3 tbsp jaggery

  28. Prepare 2 tbsp groundnut oil
  29. Prepare 1 tsp cumin seeds
  30. Get 1/2 tsp mustard seeds
  31. Prepare 5-6 whole black pepper corns
  32. Take 3-4 cloves
  33. Get 2 green chillies
  34. Get 7-9 curry leaves
  35. Get 1/4 tsp asafoetida
  36. Make ready 2 tbsp chopped fresh cilantro

The meal is simple: kadhi, dal, two sabzis, chapati, bhakri, khichdi and some farsan. Doodhi, tendli, chavli, moong, cooked dry, or with rassa (a watery gravy), spicy, sweet or raw. All served with sweet dal, kadhi, lachko dal rice, pulao khichdi, papad, pickle, and at least two kinds of sweets. Lachko Dal is a famous Gujrati variation of dal.

Steps to make Lachko dal, rice and kadhi:
  1. For lachko dal: Wash the dal 3 times and pressure cook (three whistles and 5 minutes on low flame) with minimal water.
  2. Transfer the dal in a kadhai add 1 tbsp water and jaggery.
  3. In a tempering vessel take ghee and heat it. Add mustard seeds, cumin seeds and coriander seeds to it.
  4. Add all the dry spices when mustard seeds start crackling.
  5. Add salt to it and mix well.
  6. Cook for about 5 minutes till the dal becomes thick.
  7. For rice: Wash the rice 3 times and add water. Pressure cook the rice (2 whistles and 5 minutes on low flame).
  8. For kadhi: In a vessel take curd and chickpea flour and mix well.
  9. Add water, salt and jaggery to it and mix well. Keep this mixture on gas and heat it.
  10. While the curd mixture is being heated take a tempering vessel and add oil, heat it.
  11. Add all the ingredients for tempering, after mustard seeds start crackling add asafoetida and add it to curd mixture.
  12. Heat it till one or two boils, switch off the gas and add chopped cilantro.
  13. Serve the rice with lachko dal and kadhi.

Made with Tuvar Dal, hing and ginger this dal goes best with hot steamed rice and Osaman. Lachko Dal, Bhindi Coconut Fry and Tomato Rasam. Method: Combine the washed toor dal, turmeric powder Heat ghee in a pan and add the cumin seeds. When the seeds crackle, add the dal and salt and mix well.
