  6. Prepare 8-10 Curry Leaves
  7. Take 1/4 inch Ginger Piece grated
  8. Prepare 1 small Onion finely chopped

  10. Take 1/2 tsp Turmeric Powder
  11. Prepare to taste Salt
  12. Take 2 tsp Lemon Juice
  13. Get 1/4 tbsp Coriander Leaves

  15. Take 3/4 cup Besan or Chickpea Flour
  16. Prepare 2.5 tbsp Rice Flour
  17. Make ready to taste Salt
  18. Get 1/2 tsp Turmeric Powder
  19. Make ready 1/2 tsp Red Chilli Powder
  20. Make ready as needed Water
  21. Take as needed Oil for frying

But somehow, I haven't made it, that often. Though I tried this after years, I was happy with the result, as I was bit worried how it would turn. Aloo bonda is a South Indian snack that is prepared in most households for evening tea-time nibble. Aloo bonda is also a popular street food in South India and is mostly served with coconut chutney.

Steps to make Aloo Bonda:
  1. Pressure cook the potatoes for 3 whistles, let it cool down completely and smash the potatoes and keep aside.
  2. Stuffing : Heat oil in a pan. Add mustard seeds and urad dal. Once mustard seeds crackle add curry leaves, grated ginger and finely chopped onions. Saute for a minute and then add green chilli.
  3. Add boiled and smashed potatoes, salt and turmeric powder. Mix well and cook for a 2 mins. Add lemon juice and coriander leaves. Mix well and cook for a while. Switch off the flame and let it cool down. Make 7 to 8 balls and keep aside. Stuffing balls for aloo bonda are ready
  4. Batter for outer covering : In a mixing bowl take besan, rice flour, salt, turmeric powder and red chilli powder. Mix well and gradually add water to make smooth, little thick batter. Make sure no lumps are there. Batter is ready for outer covering.
  5. Heat up the oil in kadhai on high flame. Dip the prepared stuffing balls in batter and coat well from all sides. Lower the flame and deep fry balls coated with batter till it turns golden brown in colour. Deep fry all the balls and remove on paper napkin to drain excess oil.
  6. Serve hot Aloo Bonda with tea or chutney or can be had alone.
