Steps to make Delhi Street style Matra matar chaat:
  1. Take 1 cup white peas and soak them overnight in 3-4 cups of water.
  2. Next morning, Put the soaked peas along with the same water and 1 tsp salt in a pressure cooker and boil the peas till the are soft. This would take around 4-5 whistles
  3. Once the steam evaporates, open the lid of the cooker and check if the peas is properly boiled. If not, put them back on the stove and boil for another 2-3 whistles.
  4. Mash some peas in the cooker and make sure the peas have absorbed the remaining water. The peas should be a little mushy.
  5. Transfer the mashed peas to a big bowl. Add chopped onion, tomato, ginger, coriander leaves, green chillies, salt, black salt, red chilli powder, roasted cumin powder and lemon juice. Mix everything really well.
  6. If you want you can add tamarind chutney as well to make the chaat even more tangy and flavourful but I like my matra with lots of lemon juice.
  7. The chaat is ready. You can serve it as it is or enjoy it with crispy kulchas or bread.
