- Take 1 cup rice
- Get 1/2 cup black gram lentils daal
- Take 1/4 tsp fenugreek seeds
- Take 1/2 cup curd
- Get 2-3 TSP split Bengal gram
- Take 1 tsp Ginger paste
- Prepare as per taste Salt
- Take 1 tsp Green chilli paste
- Take Pinch asafoetida
- Get 2-3 tsp ghee
- Take Pinch baking soda
- Prepare For sambhar
- Make ready 1 cup split pigeon peas
- Make ready 1/2 cup Water
- Take 1 tbsp For masala oil
- Prepare 1/2 tsp Fenugreek seeds
- Prepare 1 tbs Cumin seeds
- Make ready 1 tbs Coriander seeda
- Make ready 2 Cloves
- Prepare 1 Cardamom
- Get 1 tbsp Ginger garlic paste
- Prepare 2 tbsp Coconut
- Get as needed Curry leaves
- Take 2 tsp Red chilli
- Make ready 1/2 tsp Turmeric powder
- Prepare 1 large Onion
- Get as per taste Salt
- Prepare 2 tbs Oil
- Get 1 each Tomato, brinjal, drum sticks, potato. Veggies like As your wish
- Prepare 1 tbsp Gud / jaggery
- Make ready 2-3 tbs Tamarind
- Get 1 tsp For tadka Mustard seed
- Make ready a pinch Asafoetida
- Prepare 5 to 6 Curry leaves
Kanchipuram Idlis Recipe is a variety of idly from Tamil Nadu - an Indian state known for its variety of breakfast options including Idli, sambar and chutney, dosa. Kanchipuram Idli is a very popular South Indian idli seasoned with pepper, cumin seeds etc. I prepare Kanchipuram idli when we are bored with the regular idlis. Kanchipuram Idli, an Idli flavoured with Ginger Powder, Peppercorns, cumin and a tempting Tempering.
Instructions to make Kanjipuram idli sambhar:
- Soak rice for 7-8 hours. Than grind coarsely.
- Soak daal for a hour. Take a pan add oil & all masalas & saute in low flame till it released smell of masala.switch off the flame. When it cools grind with little water & make smooth paste.
- Soak black gram lentils daal & fenugreek seeds for 7-8 hours. Than grind with the curd.
- Mix the both batter.Add ginger paste, salt, green chilli paste, Asafoetida, ghee, baking soda & mix well. Batter consistency should be thick. Pour batter in idli mould and steam untill it's steamed.
- Take cooker put 2 tbsp oil. Put veggies, salt & saute for 2 min. Add masala paste, & daal.add 4 cup water. Boil the mixture. Cover the lid & blow 5 whistle in high flame then cook in low flame for 15 min. Switch off the flame.
- When cooker is totally cool then open a lid. Add tamarind, gud & stirred. & again put thd cooker in low flame.
- Make tadka heat oil add mustard seeds,curry leaves,asafoetida and pour in to sambhar
- Take a plate put idli in it & pour sambhar onto it. Serve hot.
The ginger powder adds a wonderful flavor to the idli along with.
